Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup almond flour
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup marinara sauce (preferably Rao’s for optimal flavor)
  • 1 cup cauliflower rice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the almond flour, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
